Corn tortillas are a staple for everyone in Honduras. Most women in rural communities start their day making them for the whole family.
At our most recent community meetings with women who are nursing or pregnant, we had hands-on sessions learning to make pink tortillas—fortifying tortillas with nutrients from beets, a simple but powerful way to add essential vitamins and minerals to a daily meal.
The workshop taught participants how to incorporate beetroot into their tortillas to add iron, folate, and vitamin C, nutrients that are especially important for growing children and pregnant or breastfeeding mothers. For many in our community, meeting daily nutritional needs can be a challenge, so this simple modification makes a big difference in preventing anemia and supporting overall health.
Led by our team, the session allowed participants to get involved directly, mixing ingredients and learning the nutritional benefits of beets and other foods.
